Device model and App version showing up in signature

When I create a new message by clicking on an "email us" link, my device make and model as well as the App Version are being added to my signature.  How can I either edit this or prevent it from being displayed?

Personally, I think the price of $4.95 is very modest for the quality application you are getting.
For me, it is the best $5 spent on software.

Do you see this in particular messages?

Sounds like those messages already have this information, I mean the "email us" link is specially crafted -- by the senders of these messages -- to include this information.
