Restore BCC in new message

I sometimes accidentally delete the bcc line when starting a new message. Is there a way to recreate the ability to enter a bcc after it was deleted other than restart with another new message? I can't find a way to enter a bcc once it is gone.

But for the record, on my compose menu (see image) there is no "add CC/BCC" option.

Yes, this is because you see the "double head" icon on the action bar — by default.
