Usually communication between client (like AquaMail) and server (mail provider) is encrypted.

You refer to the communication between servers, which is encrypted between some german providers. This is independent of the client communication.

If you ask wether to trust: These days it's more important to ask: Can we trust MobiSystems (owner of AquaMail)? Unfortunately we can't say yes.

I've never heard before about "trustedDialog", - but googling that showed, that it is essentially an initiative that uses DKIM in e-mail messages to detect phishing attempts and filter out spam and some malicious messages.
If that is correct, then yes, Aquamail does detect DKIM status of messages and displays that.
