Sending / Replying Fonts

New user as of today and I'm trying to understand how font selection works for composing and replying to email.  Is there a way to set the font type/size for composing/replying?

What do the options Rich vs plain text, rich text font size (when sending) and rich text font family (when sending) do exactly?

Seems like if I select rich test and sans serif, I get Arial, if I select serif, I get Times New Roman and if I select monospace, I get courier.

Is that pretty much how it works?  How does it decide what to do if I select default (do not set)?

An HTML message (or web page) that doesn't have styling tags with specific fonts -- will be displayed (on the receiving side) using some sort of default font, depending on the app there (on the receiving side).
