How do I change the name of a folder

Assuming you want to change the folder name as it appears in AM, it needs to be done on the server side.

You have to do it via your mail host's webmail. Note that some folder names probably can't be changed. Check with your host.

And to resync the folder list in Aqua Mail -

- bring up the account's "options and folders -> folders" either by long pressing on the account on the app's main screen, or through app settings -> manage accounts, or navigation drawer (side panel) -> manage folder.

The app will refresh folder list from server.

Since IMAP identifies folders by name only - the messages in that folder will fully re-sync.
