Before the update, I could reply or forward and email and have the ability to not include the complete former email text, just check the box or I could click on the pencil and edit the former body text.
Now it seems when I reply or forward, I just the 3 dots that just expand the rest of the email body. How do I have the ability to not not include the body of the email????

You can use the "Reply (as new)" instead of the usual "Reply" button.

Or to delete the "(...)" without having to expand it - just put the cursor on the next line and tap Backspace.

Thats my question too …
In the past I just had to uncheck the box, in order to prevent pre-Mails from being included.
Now I have to handle …menu. Seems to be a step backwards. Or can I reactivate checkbox?

No, you don't need to use the menu. Just follow Kostya's suggestion in his post above:
Or to delete the "(...)" without having to expand it - just put the cursor on the next line and tap Backspace.

FWIW it seems that Kostya's suggestion isn't in the FAQ anymore (https://www.mobisystems.com/aqua-mail/faq) - at least I couldn't find it there. I had the same question and started my search for an answer there.

It's the very last FAQ: New text editor in version 1.14
New text editor in version 1.14
Version 1.14 has a new text editor (on the compose screen) with these new features suggested by users:
– Lists (with bullets or numbers)
– Paragraph alignment (left / center / right)
– When replying, editing the “original” preserves all formatting, even images
This new editor cannot have a black background for technical reasons, so in the dark theme we made the background a “muted” light gray (the light themes use pure white).
When replying or forwarding, the original message is shown as “( … )”
If you just type your new text and tap Send, the original message will be inserted where the “( … )” placeholder was.
To delete the original message just put the cursor on the next line and tap Backspace on the soft keyboard – i.e. this works just like deleting text.
To “expand” the original message for editing just tap the “( … )”. This will keep all the formatting of the original and it’ll be editable as well.
If you prefer the old editor, the new editor can be turned off in app settings -> composing and sending.
