Is it possible to log out an account, without deleting the account?

If not, this seems to me like a most essential, most basic requirement. If the data is highly sensitive, it needs to be protected by a password, given for every session. Setting up IMAP/POP can go wrong: it is not something one wants to do every time.

(It is true Gmail discourages logging out. I consider this too mistaken, but this may be because the login also controls the whole o/s.)

Maybe protecting access to Aquamail itself would be a reasonable solution for you:  you"d need to enter a password to access your mail.

Sorry I don't understand what "logging out" would do, in particular wrt. automatic background mail checks - and how it then would be different from using a web browser to access the mail provider's email (without saving the passwords).
