How is this supposed to work? Why isn't there a working method?

Try to tap on a contact icon/image, then you can add this contact.

I hope, I got what you meant.

There are two Q&A's in the FAQ in which I hope you'll find what you are looking for:
Entering and picking emails (contacts) and Saving mail recipients (contacts)

If after reading those you still have questions, please explain in more detail what exactly you are trying/would like to do, and how it is not working for you.
