At one time I could do that, but now it seems one swipe (~8 emails) at a time is all that can be deleted at once. I have looked in settings but have not found that option. Thanks

Go to App settings -> Message list, and change the settinh under "Select all"
... Select "All" means > Loaded messages

Thanks -- I had it set to "Visible Messages" instead of "Loaded Messages"

Yes, "Visible Messages" is the default.
To protect me from:
"Help, I just accidentally deleted dozens of VERY IMPORTANT messages, please BRING THEM BACK NOW!!!!!!!"

I've seen this answer several places but, the App Settings in my S6 doesn't have > Message List. No doubt I'm not understanding something.

You need to look in Aquamail settings, not in Android settings.
For most devices, there is a 3-dot icon. I remember that for some phone, possibly Samsung, one was supposed to do something with one of the phone "soft buttons ": press or long press.
