I like to compose my emails sometimes typing in Horizontal Mode.
I can type faster with two thumbs vrs one. How do I switch to a horizontal view and horizontal composing view vrs only the std vertical view?

When composing a message? By rotating the phone / tablet...

Unless this is a trick question and I'm missing something.

Please be sure that the device's "auto-rotate" setting is enabled. Many manufacturers (Samsung, ASUS) let you turn this on and off. This is a system level thing.
