Is there a simple way that I am missing to enable selecting multiple photos / files in AquaMail?
Seems tedious that I have to select them one at a time, instead of being able to say, select three at a time to send.

Android's way of letting one app ask others to "let the user pick stuff" works on one item at a time. Even the new 4.4 "content framework" works this way.
Therefore, open Gallery or a file explore, first select / put checkmarks on multiple items, then use Share -> and choose AquaMail.
"Share" on recent Android versions is an icon bar button.

..or do it reverse. First select/mark all images and then "share with" AquaMail ;)

Android 4.4's new built-in "document" picker supports it, and AquaMail now "tells it" that it can deal with multiple picked attachments.

The way AquaMail "tells about" this capability is not unique to 4.4, it can work from 4.1 onward, so it's a matter of other app developers implementing support for multi-pick too.
